Ingredients
- 1 cup basmati rice
- 1 cup mixed vegetables — carrot, beans, peas, and potato
- 1 medium onion, thinly sliced
- 1 medium tomato, chopped
- 2 green chilies, slit
- ½ cup curd
- 2 tbsp cooking oil or ghee
- Fresh coriander and mint leaves
- Salt to taste
- Water as required
- Kokora Veg Biryani Spice Mix
How to Make Veg Biryani
1. Prepare the Rice
Wash the basmati rice thoroughly and soak it for about 20–30 minutes. Cook the rice until it is almost 80% done. Drain and keep it aside.
2. Prepare the Vegetable Masala
Heat oil or ghee in a heavy-bottomed pan. Add sliced onions and cook until golden. Add green chilies, tomatoes, and mixed vegetables. Cook for a few minutes until the vegetables become slightly tender.
3. Add the Spices
Add curd and Kokora Veg Biryani Spice Mix. Mix everything well and cook until the masala becomes aromatic and well combined.
4. Layer the Biryani
Add a layer of partially cooked rice over the vegetable masala. Top with fresh mint and coriander leaves. Add a little ghee if desired.
5. Dum Cook
Cover the pan tightly and cook on low heat for around 10–15 minutes. This allows the rice, vegetables, and spices to blend beautifully.
Serve Hot
Gently fluff the biryani and serve hot with raita, salad, or your favorite side dish.
